A Dash of History: Schweigert Meat Company's Recipe for Applesassy Sausage Links

In 1937, Ray Schweigert opened a retail store specializing in fresh and cured meats at 34th and Bryant in North Minneapolis. He only sold high-quality meats and word spread quickly about the little meat shop. Three years later, a second store was opened at 40th and Lyndale Avenue S. Schweigert consolidated both shops in 1942 and opened a larger store with a smokehouse and sausage kitchen at 2603 Emerson Avenue N. The company began selling products to wholesale meat businesses, hospitals, and hotels throughout the Midwest in the 1950s. Before going into the meat business, Ray Schweigert had a promising career as a violinist until a hand injury forced him to abandon a career in music. He died in 1996.

Applesassy Sausage Links

1 package of tiny pork sausages
2 cups applesauce
ΒΌ cup red cinnamon candies

Cut each sausage into bite-sized pieces and brown in a skillet.

Heat applesauce and candies in a saucepan until candies are dissolved, stirring frequently. Add sausages and stir to coat.

Serve warm using wooden picks for spearing links.
